Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a large bowl, beat 1 cup softened unsalted butter, 1 cup granulated sugar, and ½ cup light brown sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  3. Beat in 2 large eggs, one at a time, then add 2 teaspoons vanilla extract, mixing well after each addition.
  4. In a separate bowl, whisk together 3 cups all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until combined. Avoid overmixing.
  6. Spread the batter evenly in the prepared pan using an offset spatula or the back of a spoon.
  7. Bake for 25-28 minutes until edges are golden and a toothpick inserted near the center comes out with a few moist crumbs.
  8. Cool the bars completely on a wire rack, about 1 hour.
  9. Prepare the frosting by beating ½ cup softened unsalted butter with 2-3 cups powdered sugar, 2-3 tablespoons heavy cream, and 1 teaspoon vanilla extract until smooth and spreadable.
  10. Spread the frosting evenly over the cooled bars.
  11. Chill the frosted bars in the refrigerator for at least 30 minutes to set the frosting before slicing into squares.

Notes

Do not overmix the dough after adding flour to keep bars tender. Use room temperature ingredients for best texture. Cool bars completely before frosting to prevent melting.
