  • 3 cloves garlic, minced
  • 1 cup heavy cream (240 ml)
  • 1/2 cup grated Parmesan cheese (about 50 g)
  • 1/4 cup small-curd cottage cheese (about 60 g)
  • Salt and freshly ground black pepper, to taste
  • 1/4 teaspoon dried Italian seasoning or a pinch of dried basil and oregano
  • 1 loaf French or Italian bread (about 12 inches long)
  • 1/4 cup unsalted butter, melted (about 60 g)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 cup shredded mozzarella cheese (about 100 g)

Instructions

  1. Pat the chicken breasts dry and slice thinly or into bite-sized cubes (about 1/2 inch pieces). Season with salt, pepper, and garlic powder if using.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and sauté for 5-7 minutes until cooked through and lightly golden. Remove chicken and set aside.
  3. In the same skillet, reduce heat to medium and add 2 tablespoons unsalted butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant but not browned.
  4. Pour in 1 cup heavy cream, stirring constantly. Bring to a gentle simmer and cook for 3-4 minutes until slightly thickened.
  5. Blend 1/4 cup small-curd cottage cheese until smooth using a hand or regular blender. Stir blended cottage cheese into the sauce for extra creaminess.
  6. Stir in 1/2 cup grated Parmesan cheese and 1/4 teaspoon Italian seasoning. Season with salt and freshly ground black pepper to taste. Cook for another 2 minutes until thick and luscious.
  7. Return cooked chicken to skillet and toss gently to coat with Alfredo sauce. Keep warm on low heat.
  8. Preheat oven to 375°F (190°C). Slice bread loaf in half lengthwise.
  9. Mix melted butter with 3 cloves minced garlic. Brush garlic butter generously over cut sides of bread.
  10. Sprinkle 1 cup shredded mozzarella evenly over garlic buttered bread. Place bread halves on baking sheet, cheese side up.
  11. Bake for 10-12 minutes until cheese is melted, bubbly, and edges of bread are golden and crisp.
  12. Slice garlic bread into portions and spoon creamy chicken Alfredo mixture on top or serve alongside for dipping.
  13. Garnish with fresh parsley if desired and serve warm.
