  • ½ cup (50g) finely grated Parmesan cheese
  • 1 tablespoon (8g) all-purpose flour or cornstarch (optional)

  • Freshly ground black pepper, to taste
  • 1 tablespoon finely chopped fresh parsley or chives, for garnish
  • Pinch of freshly grated nutmeg (optional)

Instructions

  1. Pour 4 cups (950 ml) of chicken broth into a medium saucepan and bring to a gentle simmer over medium heat, about 5 minutes. Avoid boiling vigorously.
  2. In a bowl, whisk together 3 lightly beaten large eggs, ½ cup (50g) grated Parmesan cheese, 1 tablespoon (8g) flour or cornstarch if using, and a pinch of salt and black pepper until smooth.
  3. Optionally add a pinch of freshly grated nutmeg to the egg mixture and whisk to combine.
  4. Reduce the heat so the broth is barely simmering (small bubbles, not a rolling boil). Slowly drizzle the egg mixture into the broth while stirring gently in one direction with a ladle or spoon. This will create delicate egg ribbons. This step takes about 1-2 minutes.
  5. Let the soup simmer for another minute to ensure the eggs are fully set and flavors meld. Taste and adjust seasoning with salt and pepper as needed.
  6. Ladle the soup into bowls and garnish with chopped fresh parsley or chives. Serve immediately.

Notes

Use fresh eggs for tender ribbons. Drizzle egg mixture slowly while stirring gently to avoid clumps. Avoid boiling broth vigorously to keep broth clear and eggs tender. Flour is optional for slight thickening. Parmesan cheese adds richness; omit or substitute nutritional yeast for dairy-free version. Reheat gently to avoid toughening eggs. Soup keeps up to 2 days refrigerated.
