  • 1 large egg, room temperature
  • 1 cup (100g) shredded sharp cheddar cheese (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with olive oil to prevent sticking.
  2. Peel and cube sweet potatoes into roughly 1-inch pieces. Toss with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25 minutes until tender and lightly caramelized, stirring halfway.
  3. While sweet potatoes roast, heat 1 tablespoon olive oil in a large skillet over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent. Add minced garlic and cook for another 30 seconds.
  4. Add ground beef to the skillet and cook, breaking it up with a spatula, until browned and cooked through, about 6-8 minutes. Drain excess fat if needed. Season with cumin, smoked paprika, salt, and pepper.
  5. In a medium bowl or using a blender, combine cottage cheese and egg. Blend or whisk until smooth and creamy.
  6. In the prepared baking dish, spread half of the roasted sweet potatoes evenly. Layer the browned ground beef mixture on top, then drizzle or dollop the creamy cottage cheese blend over the beef. Top with the remaining sweet potatoes.
  7. Sprinkle shredded cheddar cheese evenly over the top if using, then scatter chopped parsley for freshness.
  8. Bake uncovered for 20-25 minutes until the cheese melts and the casserole bubbles around the edges.
