  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 12 ounces fettuccine pasta
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • Optional: pinch of red chili flakes

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 ounces of fettuccine and cook according to package directions until al dente, about 10-12 minutes. Drain and set aside, reserving about ½ cup of pasta water.
  2. While pasta is cooking, heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add sliced chicken breasts, season with salt and pepper, and sauté for 5-7 minutes until golden and cooked through. Remove chicken to a plate and cover to keep warm.
  3. Lower heat to medium and add 2 tablespoons unsalted butter to the same skillet. Once melted, add minced garlic and sauté gently for 1-2 minutes until fragrant and lightly golden, being careful not to burn.
  4. Pour in 1 ½ cups heavy cream, stirring constantly. Let simmer gently for 3-4 minutes until it starts to thicken. Add reserved pasta water if sauce is too thick.
  5. Gradually stir in 1 cup freshly grated Parmesan until melted and smooth. Season with salt, freshly ground black pepper, and optional red chili flakes.
  6. Return cooked chicken to the skillet and stir into the sauce. Add drained pasta and toss until noodles are fully coated. Add more reserved pasta water if needed to loosen sauce.
  7. Sprinkle chopped fresh parsley over the dish and serve immediately while warm and creamy.

Notes

Keep an eye on the garlic when sautéing to avoid bitterness. Reserve some pasta water to adjust sauce consistency. Freshly grated Parmesan cheese is essential for best flavor and texture. The sauce thickens as it cools, so serve it a bit looser than desired.
