  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 4 large garlic cloves, minced
  • Zest and juice of 1 medium lemon
  • 2 tablespoons unsalted butter
  • 1 cup (240 ml) heavy cream
  • 3/4 cup (about 75 g) freshly grated Parmesan cheese
  • 8 oz (225 g) fettuccine or preferred pasta
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • Optional: red pepper flakes, splash of white wine

Instructions

  1. Pat the chicken breasts dry and pound to an even thickness of about 1/2 inch (1.25 cm). Season both sides with salt, pepper, and garlic powder.
  2. Bring a large pot of salted water to a boil. Add 8 oz fettuccine and cook until al dente, about 10-12 minutes. Reserve 1 cup of pasta water before draining.
  3. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Cook chicken breasts 4 minutes per side until golden and cooked through (internal temp 165°F). Remove and let rest, then slice into strips.
  4. In the same skillet, reduce heat to medium. Add 2 tablespoons butter and minced garlic. Stir constantly for about 1 minute until fragrant but not browned.
  5. Pour in 1 cup heavy cream, stir to combine. Add lemon zest and juice. Simmer gently for 3-4 minutes, stirring occasionally until sauce thickens slightly.
  6. Lower heat to medium-low. Whisk in Parmesan cheese until melted and smooth. Gradually add reserved pasta water a few tablespoons at a time until desired creaminess is reached.
  7. Add cooked pasta and sliced chicken back to the skillet. Toss gently to coat evenly. Adjust salt, pepper, and lemon to taste.
  8. Stir in chopped parsley and basil just before serving.

Notes

If the sauce gets too thick, add more pasta water or cream to loosen. Watch garlic carefully to avoid burning. Rest chicken after cooking to keep it juicy. Use freshly grated Parmesan for best melting and flavor. Reserve pasta water to help sauce cling to noodles.
