  • 3 oz (85 g) pepperoni, sliced into small pieces
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning (blend of dried basil, oregano, and thyme)
  • 1/4 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh basil or parsley, chopped (optional, for garnish)

Instructions

  1. Heat a medium skillet over medium heat. Add the sliced pepperoni in a single layer and cook, stirring occasionally, until edges are crispy and some fat has rendered out, about 5-7 minutes. Remove from heat and transfer to a paper towel-lined plate to drain excess grease.
  2. In a mixing bowl, combine softened cream cheese, shredded mozzarella, grated Parmesan, garlic powder, Italian seasoning, red pepper flakes if using, salt, and pepper. Stir until creamy and well blended.
  3. Pour the heavy cream into the skillet used for the pepperoni over low heat. Add the cheese mixture and stir gently but continuously until the cheese melts into a smooth sauce, about 5 minutes. Add more cream or milk if the dip is too thick.
  4. Stir the crispy pepperoni pieces into the melted cheese mixture. Taste and adjust seasoning with extra salt or pepper if needed.
  5. Transfer the dip to a serving dish or keep warm in a small crockpot. Garnish with chopped fresh basil or parsley if desired. Serve warm.

Notes

Soften cream cheese well before mixing to avoid lumps. Cook pepperoni slowly over medium heat for crispy edges without burning. Stir dip gently over low heat to prevent separation. If dip separates or looks oily, whisk gently or add a splash of cream to bring it back together. Can crisp pepperoni in oven at 400°F for 5-7 minutes as alternative.
