A cozy and easy-to-make creamy Tuscan chicken pasta featuring tender chicken, sun-dried tomatoes, spinach, and a luscious Parmesan cream sauce. Perfect for quick weeknight dinners or casual entertaining.

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil (extra virgin preferred)
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • ½ cup chopped sun-dried tomatoes (preferably packed in oil)
  • 2 cups fresh baby spinach
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 ounces fettuccine or penne pasta

Instructions

  1. Pat chicken breasts dry and season both sides with salt, pepper, and Italian seasoning. Let rest for about 5 minutes.
  2. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente (9-11 minutes). Drain, reserving ½ cup pasta water.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 5-7 minutes per side until golden and cooked through (165°F internal temperature). Remove and let rest, then slice into strips.
  4. Reduce heat to medium and melt butter in the same skillet. Add minced garlic and sauté for about 30 seconds until fragrant.
  5. Stir in sun-dried tomatoes and cook for 1-2 minutes to release flavor.
  6. Slowly pour in heavy cream, stirring constantly. Let simmer gently for 3-4 minutes until slightly thickened.
  7. Add Parmesan cheese and stir until melted and smooth. Fold in baby spinach and cook until wilted, about 1-2 minutes.
  8. Return pasta and sliced chicken to the skillet. Toss gently to coat in sauce. Add reserved pasta water a tablespoon at a time if sauce is too thick.
  9. Adjust seasoning with salt, pepper, or more Italian seasoning if needed. Serve immediately.

Notes

Do not rush the cream simmer step to achieve a luscious sauce. Let chicken rest before slicing to keep it juicy. Use fresh Parmesan cheese for best melting and flavor. Cook sauce on medium to low heat to prevent separation. Save some pasta water to loosen the sauce if needed.
