Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or use a silicone mat for easy cleanup.
  2. Toast the almonds: Spread the almonds on a separate baking sheet and toast for about 8 minutes until fragrant and lightly golden. Let cool, then chop roughly.
  3. Mix dry ingredients: In a large bowl, whisk together all-purpose flour, baking powder, and salt. Set aside.
  4. Cream butter and sugar: In another bowl, beat softened unsalted butter with granulated sugar until light and fluffy, about 2-3 minutes.
  5. Add eggs and extracts: Beat in eggs one at a time, then mix in vanilla and almond extracts until smooth and glossy.
  6. Combine wet and dry: Gradually mix the dry ingredients into the wet until just combined, avoiding overmixing.
  7. Fold in almonds and cherries: Gently fold in the toasted almonds and chopped dried cherries evenly.
  8. Shape the dough: Divide the dough in half on the prepared baking sheet. Shape each half into a log about 12 inches long and 2 inches wide. Wet hands slightly to smooth the surface.
  9. Bake first time: Bake for 25-30 minutes until logs are golden and firm to the touch. Remove from oven and let cool on the baking sheet for 10 minutes.
  10. Slice the biscotti: Using a sharp serrated knife, slice the logs diagonally into ½-inch thick pieces.
  11. Bake second time: Arrange slices cut side down on the baking sheet. Bake for another 10-15 minutes, flipping halfway through, until crisp and golden.
  12. Cool completely: Transfer biscotti to a cooling rack and let cool completely to harden and develop the signature crisp bite.
