  • 2 ¼ tsp (1 packet) active dry yeast
  • 1 cup (240 ml) warm water
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp sugar

  • 3 cloves fresh garlic, finely minced or grated
  • 1 tbsp fresh parsley, finely chopped (optional)
  • Salt and pepper to taste
  • 8 oz (225g) mozzarella cheese, shredded or sliced
  • ¼ cup (25g) parmesan cheese, freshly grated

Instructions

  1. Activate the Yeast (10 minutes): In a mixing bowl, combine warm water (about 110°F / 43°C), sugar, and yeast. Stir gently and let it sit until frothy and bubbles form.
  2. Make the Dough (5 minutes): Add flour, salt, and olive oil to the yeast mixture. Stir until a shaggy dough forms.
  3. Knead the Dough (8-10 minutes): Turn dough onto a floured surface and knead until smooth and elastic.
  4. First Rise (45-60 minutes): Place dough in a lightly oiled bowl, cover, and let rise in a warm spot until doubled in size.
  5. Prepare Garlic Butter Base: Melt butter in a small saucepan over low heat. Add minced garlic and cook gently for about 2 minutes until fragrant. Stir in parsley, salt, and pepper. Set aside.
  6. Preheat Oven (at least 20 minutes): Heat oven to 475°F (245°C). Place pizza stone on middle rack if using.
  7. Shape the Dough (5 minutes): Punch down dough and roll out on floured surface into a 12-inch (30 cm) circle. Transfer to parchment paper.
  8. Assemble the Pizza (5 minutes): Brush garlic butter evenly over dough. Sprinkle mozzarella evenly, then dust with parmesan.
  9. Bake (12-15 minutes): Slide pizza with parchment onto hot pizza stone or baking sheet. Bake until crust is golden and cheese is melted and bubbly.
  10. Finish and Serve: Remove from oven, let rest for 2 minutes, then slice and serve immediately.

Notes

Preheat oven for at least 20 minutes to ensure a crispy crust. Use a pizza stone for best results or flip a baking sheet upside down as an alternative. Let pizza rest a couple of minutes before slicing to avoid burning your mouth. For extra crispy crust, bake a few minutes longer or place pizza on the lowest rack. Adjust garlic amount if too strong and consider adding a pinch of sugar to mellow garlic flavor.
