  • ½ cup (120g) cottage cheese, small-curd
  • 1 large egg, room temperature
  • 2 tablespoons green onions, finely chopped
  • ¼ teaspoon black pepper, freshly ground
  • ¼ teaspoon garlic powder (optional)

Instructions

  1. In a large bowl, combine the all-purpose flour and salt. Add the cold, cubed butter. Using a pastry cutter or your fingers, quickly work the butter into the flour until the mixture resembles coarse crumbs with pea-sized bits, about 3-5 minutes. Avoid overworking.
  2. Gradually add 6 tablespoons of cold water, mixing gently with a fork. Add more water by tablespoon if needed until dough forms a firm but pliable ball. Wrap in plastic wrap and chill in the fridge for at least 20 minutes.
  3. While dough chills, mix diced ham, grated cheddar, cottage cheese, chopped green onions, egg, black pepper, and garlic powder in a medium bowl until evenly combined and creamy but not runny.
  4. Lightly flour a work surface and roll the chilled dough into a rough 10-inch diameter circle about ¼ inch thick.
  5. Transfer dough to a parchment-lined baking sheet. Spread the filling evenly over the dough, leaving a 1-inch border.
  6. Fold the dough edges inward over the filling to create a rustic crust, leaving the center open.
  7. Preheat oven to 400°F (200°C). Bake the pie for 20-25 minutes until crust is golden and crisp and filling is bubbly and slightly browned. Check after 15 minutes to prevent burning.
