These crispy sausage rolls combine leftover turkey, stuffing, and cranberry sauce wrapped in flaky puff pastry for a festive and easy holiday snack or appetizer.

  • 2 cups (450g) leftover cooked turkey, roughly chopped or shredded
  • 1 ½ cups (200g) stuffing, homemade or store-bought
  • ½ cup (120ml) cranberry sauce, whole berry or smooth
  • 1 pound (450g) mild pork sausage meat (or turkey sausage for leaner option)
  • 2 sheets puff pastry (each about 9 x 12 inches), thawed
  • 1 large egg beaten with 1 tablespoon water (egg wash)
  • 1 tablespoon finely chopped fresh herbs (parsley or sage, optional)
  • Freshly ground black pepper, to taste
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine chopped turkey, stuffing, sausage meat, cranberry sauce, herbs (if using), black pepper, and salt. Mix gently until evenly distributed.
  3. On a floured surface, unfold one sheet of puff pastry. Cut into 3 long rectangles about 4 inches wide.
  4. Divide the filling evenly along one long edge of each pastry strip, leaving a ½ inch border. Roll the pastry over the filling and seal the edges by pressing lightly with fingers or a fork.
  5. Crimp edges with a fork and cut each long roll into 3-4 smaller sausage rolls about 3 inches long. Place seam-side down on the baking sheet.
  6. Brush each sausage roll with the egg wash for a golden, glossy finish.
  7. Bake for 20-25 minutes until pastry is puffed and golden and filling reaches 160°F (71°C). Rotate the tray halfway through baking for even browning.
  8. Remove from oven and let rest for 5 minutes before serving.

Notes

If pastry browns too quickly, cover loosely with foil halfway through baking. Drain watery cranberry sauce to avoid soggy pastry. Chill sausage meat before mixing to help hold shape. Use cold puff pastry for easier handling. Can be frozen unbaked and baked from frozen with extra cooking time.
