  • 8 oz (225 g) skirt or ribeye steak, thinly sliced
  • 4 oz (115 g) shredded mozzarella or Monterey Jack cheese
  • 2 tbsp unsalted butter, softened
  • 1 medium yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • Salt to taste
  • 4 soft white bread rolls or hoagie buns
  • 1 tbsp olive oil
  • Optional: sliced jalapeños
  • Optional: splash of Worcestershire sauce

Instructions

  1. Slice steak thinly against the grain into strips about ¼ inch thick. Toss with smoked paprika, garlic powder, salt, and pepper. Let sit 5-10 minutes.
  2. Heat olive oil and 1 tbsp butter in skillet over medium heat. Cook onions for 7-8 minutes until caramelized. Add garlic for last 2 minutes.
  3. Push onions aside, increase heat to medium-high. Add steak strips in single layer, sear 1-2 minutes per side until browned but juicy. Mix with onions and cook 1 more minute.
  4. Slice rolls lengthwise without cutting through. Spread remaining butter inside and toast rolls lightly in pan or under grill for 2-3 minutes.
  5. Fill toasted rolls with steak and onion mixture. Sprinkle shredded cheese on top. Add jalapeños or Worcestershire sauce if desired.
  6. Wrap rolls in foil and warm in oven at 350°F (175°C) for 5 minutes to melt cheese.
  7. Remove from oven, unwrap carefully, and serve immediately.

Slice steak thinly against the grain for tenderness. Caramelize onions slowly over medium heat to avoid burning. Cook steak in batches to avoid overcrowding the pan.
