  • 6 tbsp (85 g) unsalted butter, cold and cubed
  • 1/2 cup (120 g) humous
  • 3/4 cup (180 ml) buttermilk (or milk plus 1 tsp lemon juice)
  • 2 tbsp fresh thyme leaves, finely chopped
  • 3 tbsp toasted sesame seeds
  • 1 egg, lightly beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cut the cold, cubed butter into the flour mixture using a pastry cutter or two forks until pea-sized pieces remain.
  4. Add the humous and fresh thyme leaves to the flour-butter mixture and gently toss to combine.
  5. Pour in the cold buttermilk and mix gently with a wooden spoon or hands until the dough just comes together. Avoid overmixing.
  6. Turn the dough onto a lightly floured surface and pat into a 1-inch thick round about 8 inches across.
  7. Cut the dough into 8 equal wedges and transfer them to the prepared baking sheet, spacing about 1 inch apart.
  8. Brush the tops with the beaten egg and sprinkle generously with toasted sesame seeds.
  9. Bake for 18-22 minutes until golden brown and springy to the touch.
  10. Cool on a rack for at least 10 minutes before serving.
