  • 1 cup canned diced tomatoes with green chilies (e.g., Rotel)
  • 1 cup refried beans
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup sour cream (optional)
  • 2 green onions, sliced
  • Small handful fresh cilantro, chopped
  • Tortilla chips (enough for layering and serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium-high heat. Add ground beef and cook for 5 minutes, breaking it apart with a spatula.
  3. Add chopped onion and minced garlic; cook until onions soften and beef is browned, about 5-7 minutes. Drain excess fat if necessary.
  4. Sprinkle taco seasoning over the beef mixture and stir well.
  5. Pour in diced tomatoes with green chilies and simmer for 3-4 minutes until slightly thickened and fragrant.
  6. Spread refried beans evenly on the bottom of a 9×13 inch baking dish.
  7. Spoon the cheesy beef mixture over the refried beans, spreading evenly.
  8. Sprinkle shredded cheddar and Monterey Jack cheeses over the beef layer.
  9. Bake in the preheated oven for 15-20 minutes until cheese is melted and bubbly with golden spots.
  10. Remove from oven and let cool for 5 minutes.
  11. Dollop sour cream over the top, then scatter sliced green onions and chopped cilantro.
