These chewy raspberry jam oat bars are a perfect homemade snack with a balance of sweet, tart, and hearty oat texture. Easy to make and great for anytime snacking.

  • 2 cups (180 g) old-fashioned rolled oats
  • 1 cup (120 g) all-purpose flour
  • 3/4 cup (150 g) brown sugar
  • 3/4 cup (170 g) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup (320 g) raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, combine rolled oats, all-purpose flour, brown sugar, and salt. Mix well.
  3. Add softened unsalted butter and vanilla extract. Stir until the mixture becomes crumbly but holds together when pressed, about 1-2 minutes. Add a teaspoon of milk if too dry, but keep crumbly.
  4. Press about two-thirds of the oat mixture firmly into the bottom of the prepared pan to create an even, compact layer.
  5. Spread raspberry jam evenly over the pressed oat base in a smooth layer.
  6. Crumble the remaining oat mixture over the jam layer without pressing it down.
  7. Bake for 30-35 minutes until the top is golden brown and jam is bubbly around the edges. Check at 30 minutes to avoid burning.
  8. Let the bars cool completely in the pan on a wire rack, about 1 hour. Use the parchment overhang to lift bars out.
  9. Cut into 12 squares and enjoy.

Notes

Use room temperature butter for better mixing. Press the bottom layer firmly to avoid sogginess. Use thicker, seedless jam for best texture. Let bars cool completely before cutting or chill for 15-20 minutes to firm up. Bars keep well in an airtight container at room temperature for 3 days or refrigerated for up to a week. Freeze up to 3 months.
