  • pounds (680 g) beef sirloin steak tips, trimmed and cut into bite-sized pieces
  • Salt and black pepper, to season
  • ¼ cup (30 g) all-purpose flour
  • 2 tablespoons olive oil or vegetable oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups (480 ml) beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard (optional)
  • 1 teaspoon fresh or dried thyme
  • Salt and pepper, to taste

Instructions

  1. Pat 1½ pounds of sirloin steak tips dry with paper towels. Season generously with salt and black pepper. Toss the steak tips in ¼ cup of all-purpose flour until lightly coated. Shake off excess flour.
  2. Heat 2 tablespoons of olive oil over medium-high heat in a large skillet. When the oil shimmers, add the steak tips in a single layer without crowding the pan. Sear undisturbed for 2-3 minutes until a golden crust forms. Flip and sear the other side for 2 minutes. Transfer cooked steak tips to a plate and set aside.
  3. Lower heat to medium and add 2 tablespoons unsalted butter to the skillet. Once melted, add the sliced onion and cook, stirring occasionally, until softened and lightly caramelized, about 6-8 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  4. Slowly pour in 2 cups beef broth, scraping the pan to loosen browned bits. Stir in Worcestershire sauce, Dijon mustard (if using), and thyme. Bring to a gentle simmer. Return steak tips and any collected juices to the pan. Simmer uncovered for 5-7 minutes, stirring occasionally, until gravy thickens. Add more broth if gravy becomes too thick.
  5. Taste and adjust salt and pepper as needed. Remove from heat and let rest for a couple of minutes before serving.

Notes

For gluten-free gravy, substitute all-purpose flour with cornstarch or arrowroot powder. For dairy-free, replace butter with olive oil or vegan butter. Avoid overcrowding the pan when searing steak tips to get a good crust. If gravy is too thin, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir into gravy, cooking for another minute until thickened. Leftovers store well in the fridge for up to 3 days and taste better the next day.
