  • 4 salmon fillets (6 oz / 170 g each), skin-on or skinless
  • 3 tablespoons (45 ml) ghee, melted
  • 2 tablespoons (28 g) unsalted butter, softened
  • 4 cloves garlic, finely minced or pressed
  • 2 tablespoons parsley, finely chopped
  • 2 tablespoons dill, finely chopped
  • 2 tablespoons thyme, finely chopped
  • 1 tablespoon (15 ml) freshly squeezed lemon juice
  • 1 teaspoon (5 g) sea salt, plus more for seasoning
  • ½ teaspoon (1 g) freshly ground black pepper
  • Optional: red pepper flakes for heat
  • Optional: lemon zest for extra brightness

Instructions

  1. Preheat your oven to 400°F (200°C). Line your baking dish with parchment paper or lightly grease it to prevent sticking.
  2. In a small saucepan or microwave-safe bowl, melt the ghee and butter together until just liquid (about 1-2 minutes). Stir in the minced garlic and cook gently for 30 seconds without browning.
  3. Remove from heat and stir in the chopped parsley, dill, thyme, lemon juice, sea salt, and black pepper. Mix well.
  4. Pat the salmon fillets dry with paper towels. Lightly sprinkle both sides with salt and pepper.
  5. Place the salmon in the baking dish skin side down if applicable.
  6. Brush the garlic butter herb mixture generously over the salmon fillets, allowing some butter to pool around the fish.
  7. Bake in the preheated oven for 12-15 minutes, depending on thickness, until salmon flakes easily but remains moist. For medium-rare, aim for an internal temperature of 125°F (52°C); for fully cooked, 140°F (60°C).
  8. Optional: Switch the oven to broil for the last 2 minutes to brown the herb crust, watching carefully to avoid burning.
  9. Remove from oven and let the salmon rest for 2-3 minutes before serving to allow juices to redistribute.

Notes

Use ghee for a higher smoke point and nutty flavor that browns well without burning. Pat salmon dry before seasoning to help herb butter stick. Check salmon a few minutes before end time to avoid overbaking. Optional broiling for 2 minutes adds a golden crust. Fresh herbs are preferred but dried can be substituted. Leftover herb butter can be drizzled on serving. Store leftovers in airtight container up to 2 days; reheat gently.
