Flavorful Strawberry Brie Flatbread with Honey and Thyme

A quick and easy flatbread featuring juicy strawberries, creamy melted Brie, fresh thyme, and a drizzle of honey on a crisp, chewy crust. Perfect for a snack or casual entertaining.

  • 1 large flatbread or naan (810 inches diameter), preferably whole wheat
  • Olive oil, for brushing
  • 4 oz Brie cheese, rind removed and sliced thinly
  • 1 cup fresh strawberries, hulled and sliced thin
  • 1 tablespoon fresh thyme leaves, finely chopped (or 1 teaspoon dried thyme)
  • 2 tablespoons honey (raw or wildflower preferred)
  • Pinch of sea salt
  • Freshly ground black pepper, optional

Instructions

  1. Preheat your oven to 400°F (200°C). Place a pizza stone inside if using; otherwise, line a baking sheet with parchment paper.
  2. Lightly brush both sides of the flatbread with olive oil and place it on the prepared baking surface.
  3. Evenly distribute the thin slices of Brie over the flatbread, leaving a small border around the edges.
  4. Scatter the sliced strawberries over the Brie, then sprinkle the chopped fresh thyme evenly on top.
  5. Lightly sprinkle a pinch of sea salt and, if desired, a few cracks of black pepper over the toppings.
  6. Bake for 10-12 minutes, or until the Brie is melted and bubbly and the flatbread edges are golden and crisp.
  7. Remove the flatbread from the oven and immediately drizzle the honey over the warm toppings.
  8. Let the flatbread cool for 2-3 minutes, then slice into wedges and serve warm.

Notes

Remove the rind from the Brie for a smoother melt. Slice strawberries thinly to avoid soggy crust. Drizzle honey after baking to preserve its fresh sweetness. Use a pizza stone for a crisper crust if available. For gluten-free, use gluten-free flatbread; for vegan, substitute Brie with vegan cheese and honey with maple syrup.
