Instructions

  1. Prepare the filling: Heat 1 tablespoon of oil in a skillet over medium heat. Add minced garlic and ginger and sauté until fragrant, about 30 seconds.
  2. Add chopped mushrooms, carrots, bell pepper, and green onions. Stir-fry for 3-4 minutes until vegetables soften but retain some bite.

  4. Whisk the eggs vigorously in a mixing bowl until pale yellow and frothy, about 3-5 minutes.

  6. Cook gently without stirring until the bottom sets and the top is still slightly runny, about 5-7 minutes.
  7. Spoon half the vegetable filling over one side of the omelette. Carefully fold the other half over the filling using a spatula.
  8. Cook for another 1-2 minutes to finish cooking and warm the filling through. Slide the omelette onto a plate.
