  • 1.5 oz Irish whiskey (e.g., Jameson)
  • 0.5 oz fresh lime juice (about 1/2 lime)
  • 46 oz ginger beer (spicy, high-quality brand like Fever-Tree or Bundaberg)
  • 1 tsp grated fresh ginger or a small slice (optional)
  • Ice cubes
  • Lime wedge or wheel (for garnish)
  • Mint sprig (optional garnish)

Instructions

  1. Fill a copper mug or highball glass with ice cubes to chill.
  2. If using fresh ginger, muddle a thin slice or sprinkle about 1 teaspoon of grated fresh ginger at the bottom of the glass.
  3. Pour 1.5 ounces (45 ml) of Irish whiskey over the ice and ginger.
  4. Add 0.5 ounces (15 ml) of fresh lime juice.
  5. Top with 4 to 6 ounces (120-180 ml) of ginger beer.
  6. Stir gently with a bar spoon to combine flavors without losing fizz.
  7. Garnish with a lime wedge or wheel and a sprig of mint if desired.
  8. Serve immediately and enjoy cold and fizzy.

Notes

Use fresh lime juice for best flavor. Choose a spicy, high-quality ginger beer. Muddling fresh ginger adds a lively spicy note but is optional. Stir gently to preserve carbonation. Adjust sweetness with simple syrup if needed. For a mocktail, omit whiskey and increase ginger beer and lime juice.
