  • Optional: A pinch of flaky sea salt to sprinkle on top before baking

Instructions

  1. Prep your baking sheets and ingredients. Line two baking sheets with parchment paper or silicone mats. Let your butter and egg come to room temperature for about 30 minutes before starting.
  2. Mix dry ingredients. In a medium bowl, whisk together 2 ยผ cups (280g) all-purpose flour, 1 tablespoon cornstarch, 1 teaspoon baking soda, and ยฝ teaspoon salt. Set aside.
  3. Cream butter and sugars. In a large bowl, beat ยพ cup (170g) softened unsalted butter with ยฝ cup (100g) granulated sugar and 1 cup (220g) light brown sugar on medium speed until the mixture is pale and fluffy, about 3-4 minutes.
  4. Add egg and vanilla. Beat in 1 large room-temperature egg and 1 ยฝ teaspoons vanilla extract until fully combined. The mixture may look slightly curdledโ€”thatโ€™s okay.
  5. Combine wet and dry. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding with a spatula until just incorporated. Avoid overmixing.
  6. Fold in chocolate chips. Gently fold in 1 ยฝ cups (270g) chocolate chips, making sure theyโ€™re evenly distributed without overworking the dough.
  7. Chill the dough. Cover the dough with plastic wrap and chill for at least 30 minutes. This helps prevent spreading and deepens flavor.
  8. Preheat oven. Set your oven to 350ยฐF (175ยฐC) about 15 minutes before baking.
  9. Scoop cookies. Using a cookie scoop or tablespoon, drop dough balls about 2 inches apart on the prepared baking sheets. Optionally sprinkle a tiny pinch of flaky sea salt on each ball.
  10. Bake. Bake for 10โ€“12 minutes or until edges are golden but centers still look slightly underdone. They will set as they cool.
  11. Cool. Let cookies cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
