  • 1/3 cup (80 ml) extra virgin olive oil
  • 2 sprigs fresh rosemary, finely chopped
  • 2 teaspoons fresh thyme leaves
  • 3 cloves garlic, thinly sliced or crushed
  • 1 teaspoon sea salt (kosher preferred)
  • 1/2 teaspoon freshly ground black pepper
  • Zest of 1 lemon (optional)
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Prepare the herb-infused olive oil by combining 1/3 cup extra virgin olive oil with chopped rosemary, thyme leaves, and sliced garlic in a small bowl. Stir gently, cover, and let sit at room temperature for at least 30 minutes, ideally overnight.
  2. Pat the turkey chops dry with paper towels. Season both sides with sea salt and black pepper.
  3. Heat a cast iron skillet or heavy-bottomed frying pan over medium-high heat for 3-5 minutes until hot but not smoking.
  4. Add 1 tablespoon of the herb-infused olive oil to the pan and swirl to coat.
  5. Place the turkey chops in the skillet without overcrowding. Cook for 4-5 minutes on the first side without moving them to form a good crust.
  6. Flip the chops using tongs and drizzle more herb oil over the top. Cook for another 4-5 minutes, adding a teaspoon or two of infused oil if the pan gets dry. Spoon some oil and garlic bits over the chops as they cook.
  7. Check doneness with a meat thermometer aiming for 165°F (74°C) or cut into the thickest part to ensure meat is opaque and juices run clear.
  8. Remove the chops and place on a warm plate. Tent loosely with foil and let rest for 5 minutes to redistribute juices.
  9. Before serving, zest a fresh lemon over the chops and sprinkle with chopped parsley if desired. Serve immediately.
