  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • ½ cup (120ml) sour cream
  • Zest and juice of 2 fresh lemons (about 3 tablespoons juice)
  • 1 teaspoon pure vanilla extract
  • 1 cup (120g) powdered sugar
  • 12 tablespoons milk or lemon juice (to thin glaze as needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together sifted all-purpose flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened unsalted butter with granulated sugar until fluffy and pale, about 3-4 minutes.
  4. Beat in eggs one at a time, then stir in sour cream, lemon zest, lemon juice, and vanilla extract.
  5. Gradually fold the dry ingredients into the wet ingredients, mixing just until combined.
  6. Using a cookie scoop or tablespoon, drop dough balls about 2 inches apart on the baking sheet.
  7. Bake for 10-12 minutes, until edges are set but centers still look soft and slightly underbaked.
  8. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. Whisk powdered sugar with 1-2 tablespoons fresh lemon juice or milk until smooth and pourable but not runny.
  10. Drizzle or spread the lemon glaze over cooled cookies and let set for about 20 minutes before serving.

Notes

If dough is too sticky, chill for 15-20 minutes before scooping to prevent over-spreading. Pull cookies out when centers look slightly underbaked for soft texture. Let glaze set on cooled cookies to avoid melting. Store with a slice of bread to maintain moisture. Cookies freeze well when wrapped individually.
